I know breakfast can be a challenge for a lot of people out there, especially those transitioning from a standard American diet to the autoimmune protocol or paleo diet. One of the current “trendy” ways to save time in the morning is to soak oatmeal overnight so that it just needs to be heated up in the morning. Obviously, oatmeal is not paleo or AIP friendly, but recently I’ve been experimenting with tigernuts and they are awesome. Tigernuts are not a tree nut but actually a tuber that have a delightfully nutty and slightly sweet taste, making them perfect for an oatmeal replacement. The only problem is that in their raw form they are quite hard and they need to be soaked before being eaten. By soaking them overnight with the rest of the ingredients in this recipe and then blending them in the morning they add a great flavor and texture that is similar to traditional oatmeal.
The other benefit of having tigernuts for breakfast is that they are a resistant starch, which means they aid digestion and feed healthy gut flora and they are also filled with healthy fats that will keep you satiated. Pair that with the other ingredients in this recipe and it is actually a fairly nutritionally balanced breakfast for those transitioning diets or looking for a sweeter breakfast treat every now and again.
Overnight Banana Nut “Oats”
½ cup of sliced Tigernuts
½ cup of Unsweetened Shredded Coconut
1 Medium Banana, mashed
½ cup of Coconut Milk
½ cup of Water
½ tsp Cinnamon
1 TBS Collagen Powder
1 TBS Maple Syrup
In a pint sized mason jar mix together all of your ingredients. Close the lid and store in the refrigerator over night (8ish hours). In the morning use an immersion blender or a food processor and blend up your “oats” and heat them up. Enjoy.
