A year ago when I began my journey on the Autoimmune Protocol, resources were still very limited. There were a handful of websites with a small collection of recipes and the sole explanation of the diet and its functions came from Sarah Ballantyne’s website The Paleo Mom. A year later many more people have discovered this amazing healing tool and the amount of information has exploded. Sarah Ballantyne now has two huge and wonderful books one filled with the science and explanation of the diet, the other filled with recipes. There are e-books with AIP friendly treat recipes and information solely on the reintroduction phase of the diet. There are many more blogs and websites with trusted recipes and resources, it is truly a great time to be a part of this community.
That being said, there is one book that is especially near and dear to my heart that I want to tell you all about today, The Autoimmune Paleo Cookbook by author Mickey Trescott.. This was the first AIP friendly cookbook to be published and it is amazing. The day I got it I just flipped through the pages in awe of some of the recipes. Trescott’s book is a great resource for people just starting the autoimmune protocol. The first part of the book is dedicated to sharing basic information surrounding the autoimmune protocol, cooking, and meal planning. There is even a full four week meal plan included to easily guide you through the first month of the protocol.
The rest of the book is dedicated to recipes ranging from appetizers and snacks to beverages to sauces, vegetables, meat and treats. The thing that I love the most about this book is that the recipes are really geared towards every day life. While it can be great to have AIP recipes to reserve for special occasions like holidays the thing that overwhelms so many people is the question of what to eat throughout the day every day and Mickey’s recipes are simple, accessible, and great for using day in and day out. You won’t need hours upon hours to make one dish and you won’t be eating anything too exotic. For example, one of my favorite recipes from her bok is her dry rubbed steak recipe. Before making this recipe I firmly believed that steak was only meant to be cooked on a grill and as we didn’t have a grill we didn’t eat steak. For the sake of my husband and his love of steak, I decided to give the pan fried steak recipe a try and I was hooked! It was just a basic combination of spices rubbed on a steak which was seared and fried on the stove, just about as simple as it could be and yet it was one of the best steaks I had ever eaten. My husband still maintains that it is his favorite AIP friendly meal.
Whether you are just starting out on AIP or you are in need of new recipe inspiration I really recommend buying a copy of this book. I have been AIP for a year and I still use this cookbook on a weekly basis!
