For me, side dishes are the hardest part about following a paleo lifestyle. Traditional side dishes are a thing of the past. Rolls, biscuits, rice, baked potatoes, and corn might as well be foreign words thrown in there with the odd looking Koine Greek vocabulary my husband studies night after night. (We’re a dual grad student household… can you say caffeine?)
I posted earlier about my solution to the bread problem and today I have another solution for you. Savory Sweet Potato Hash. I have never had a huge sweet tooth and nine times out of ten I’ll take hearty, savory food over sweets any day. I had three sweet potatoes from the photo I took for my introductory post and they needed to be put to good use. However, since I was trying to create a side for my crustless spinach quiche, sweet would simply not do. Enter onions, garlic, and the grease from the bacon I cooked for the quiche and PRESTO, dinner is served! (In all reality, it was more like “dinner’s ready let’s watch Princess Bride on the couch while we eat…” but hey presto is a relative term) Ramblings aside, I hope you enjoy this non-traiditonal spin on sweet potatoes and resurrect the joy of the side dish in your life.
3 Sweet Potatoes, shredded
1 Large Onion, finely chopped
1 tsp of minced garlic
1 tsp of garlic powder
olive oil or bacon grease
salt to taste
If you have a food processor now is the time to break it out. It will make short work of shredding your sweet potatoes and chopping your onion. Begin to heat your oil in a large skillet over medium heat. Add in sweet potatoes, onion, garlic and spices and stir. Heat covered, on medium or low heat, stirring occasionally until very tender. Serve and enjoy.
