I don’t know about you, but I have no idea where the fall has gone. I feel like I blinked and we went right from August to November. Between my work as a nanny, church activities and family events I feel like I have barely had the time to sit down let alone come up with tons of fancy new recipes. This blog, and my cooking style in general has always been focused on making healing food as easy and accessible as possible, but with how busy life has been for me these past few months I have a renewed appreciation for simple, low maintenance meals. I love coming up with fancier recipes, but the reality is that most of us will not make fancy recipes on a day-to-day basis. What we need are easy, go-to recipes that will get dinner on the table as quickly as possible without sacrificing all of the hard work we have put in when it comes to our health.
This is one of those recipes basically it comes down to put the pork chops in the crock pot, cook, add some toppings, eat. It doesn’t get much easier than that. Plus who doesn’t love the classic pork and pineapple combo? Pineapple and ham pizza used to be my absolute favorite so the combo of ham and pineapple holds a wonderful place in my heart and my pallet.
So, as we approach the holidays I hope that both you and I will take the opportunity to slow down a bit and enjoy the season, but on those regular old busy days I hope that this recipe provides the quick and easy convenience that you need.
Slow Cooker Hawaiian Pork Chops (AIP/Paleo)
3-4 boneless pork chops
3 TBS Apple Cider Vinegar
1 TBS Maple Syrup
2 TBS Olive Oil
½ tsp sea salt
½ tsp garlic powder
¼ tsp ground ginger
½ cup diced pineapple
3 strips of bacon
Place your pork chops in the crock of your slow cooker. In a small bowl combine your apple cider vinegar, maple syrup, olive oil, sea salt, garlic powder, and ginger. Stir until well mixed and pour over your pork chops. Cover and cook on high for about 3 hours. When your pork chops are tender take them out of the slow cooker and top them with your diced pineapple and crumbled bacon. Serve and enjoy.
